About the Domaine

L'Alambic Bourguignon (SAB) was founded by Mathieu Sabbagh, who launched a mobile distillery to preserve and continue Burgundy’s rich distillation traditions. By moving the distillery from one vineyard to another at the end of each harvest, Mathieu ensures that freshly harvested grapes are distilled immediately. This approach produces delicate, elegant craft spirits that celebrate the artisan heritage of Burgundy and highlight the exceptional quality of the region’s grapes.

Elevage (Aging Process)

The "Eaux de Vies" from L'Alambic Bourguignon are made from Burgundy’s iconic grape varieties, Chardonnay and Pinot Noir. After distillation, the spirits rest for 5 years in traditional Burgundy oak barrels, imparting depth, complexity, and refined aromas. They then undergo a finishing period in Cognac barrels for several months, which adds a unique character and smoothness. This careful aging and meticulous distillation process ensures each spirit embodies elegance, craftsmanship, and the time-honored legacy of Burgundy.
