About the Domaine:

L'Alambic Bourguignon (SAB) was founded by Mathieu Sabbagh, who introduced a mobile distillery to Burgundy. Using this innovative approach, Mathieu continues a traditional regional practice, moving his distillery from one vineyard to another at the end of each harvest. His goal is to craft delicate, elegant spirits that honor Burgundy’s heritage, producing traditional French craft spirits with locally sourced ingredients.

Elevage (Aging Process):

This "eaux de vie" is made from pears grown on a small organic farm in southern Burgundy. The pears are macerated in Burgundy wine barrels, absorbing the nuances of the wood and surrounding environment. After maceration, the mixture is distilled to create a refined, aromatic spirit that highlights the natural purity of the pears while reflecting the craftsmanship and dedication of L'Alambic Bourguignon.

A true expression of Burgundy’s artisanal spirit, offering elegance, finesse, and the authentic taste of local pears.

Tasting notes:

Powerful nose of matured pears and some pepper and vanilla hints. Well balanced palate with beautiful aromas.
