About the Domaine:

L'Alambic Bourguignon (SAB) was established by Mathieu Sabbagh, who introduced a mobile distillery to Burgundy. This innovative approach allows Mathieu to uphold the region's long-standing distillation tradition by moving his distillery from one vineyard to another at the end of each harvest. He distills freshly harvested grapes into delicate and refined spirits, combining traditional French craftsmanship with a modern touch that reflects the unique character of Burgundy.

Elevage (Aging Process):

For this particular spirit, Mathieu macerates juniper berries along with 14 other botanicals, infusing complex and aromatic flavors. Burgundy Chardonnay and Pinot Noir "eaux de vie" are then blended into the mix, which is left to settle for three months in Moscatel barrels. This aging process gives the gin a delicate pink hue and a vibrant, refined character, showcasing the perfect balance between traditional craftsmanship and innovative techniques of L'Alambic Bourguignon.

A truly distinctive French craft spirit, ideal for those who appreciate elegance, innovation, and the unique essence of Burgundy.

Tasting notes:

Rich and balanced nose of spices, juniper and ginger with a touch of grapes on the finish. Round, fruity and elegant on the palate due to this rest time in the Moscatel barrels. Very unusual gin!

Serving Advice

Take a beautiful cocktail glass and pour 1/3 of SAB's Gin into the glass. Put 2 or 3 big ice cubes and a poor 2/3 of an excellent tonic like East Imperial or Fever Tree tonic. You can add thin slices of dried blood orange.
