About the Domaine:

The Domaine des Hospices de Beaune is a prestigious "winemaking hospital" with a rich legacy spanning over five centuries. It all began in 1457 when Jean Guillotte le Verrier made a donation of vines to the "Hôtel-Dieu" (the hospital in Beaune). Donating vines was a gesture of gratitude from families and patients to the institution. The wines produced by the Hospices de Beaune, often referred to as "Cuvée," typically carry the name of the family who donated the respective plots of land.

Today, the Domaine spans 60 hectares, with 85% of the vineyards classified as Premier Cru and Grand Cru. Each year, the wines produced here are sold at a renowned auction held on the third weekend of November.

Elevage (Aging Process):

In 2017, Ludivine Giveau took over the leadership of the Domaine des Hospices de Beaune. The wines sold at the auction are very young, as they are harvested only a few months before the event. After the auction, the wines require professional aging. This is where the expertise of a "negotiator" comes in. In our case, my father, who has been in the business for over 35 years, takes on the responsibility of aging the barrels.

For 16 to 18 months, my family ensures that the wines are aged with the utmost care, respecting the specific terroir, and highlighting the unique nuances and complexities of each wine. This process is vital for allowing the wines to reach their full potential, showcasing the exceptional qualities of the appellations from the Domaine.

Tasting notes:

Deep cherry color. Aromas of small red and black fruits and violet flowers. The body is ample with a discreet tannic. The palate is round, well balanced, powerful but elegant. This wine has the perfect proportions.
